Cheddar, Shrimp & Fish Cakes
Ingredients
- 1/2 cup light mayonnaise
- 1/4 cup chopped fresh cilantro
- 1 Tbsp. fresh lime juice
- 1/2 lb. cooked, deveined shrimp
- 1/2 lb. skinless red snapper, cut into 1-inch pieces
- 2 cups (8 oz.) Sargento® Fancy Shredded Mild Cheddar Cheese, divided
- 1 cup fresh bread crumbs, divided
- 1 egg
- 2 Tbsp. canola oil, divided
- 4 lime wedges (optional)
Directions
- Combine mayonnaise, cilantro and lime juice in small bowl.
- Coarsely chop shrimp in food processor using on/off pulses. Add red snapper; process until coarsely chopped. Add 1-1/2 cups cheese, 1/2 cup bread crumbs, 2 tablespoons mayonnaise mixture and egg. Process until combined. Shape mixture into 8 patties, 1/2-inch thick. Coat patties lightly in remaining bread crumbs.
- Heat 1 tablespoon oil in large skillet over medium heat. Cook 4 patties at a time in hot oil 3 minutes per side or until golden brown and cooked through. Keep patties warm in preheated 200°F oven while cooking remaining 4 patties in remaining oil.
- Serve with remaining mayonnaise mixture. Garnish with lime wedges, if desired.
