Chicken Breasts in Mustard Cream

Ingredients

  • 1 Tbsp. olive oil
  • 2 boneless, skinless chicken breast halves
  • 1/8 tsp. salt (optional)
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. dry white wine or vermouth
  • 3/4 cup heavy cream
  • 1 Tbsp. Dijon mustard
  • 3/4 cup (3 oz.) Sargento® Artisan Blends® Shredded Parmesan Cheese
  • 1/8 tsp. pepper

Directions

  1. Heat oil in large skillet over medium heat. Add chicken and salt, if desired. Cook 5 minutes per side or until chicken is no longer pink in center. Transfer to serving plates; keep warm.
  2. Add vinegar and wine to same skillet. Cook over medium-high heat 2 minutes or until mixture is thick and syrup-like. Add cream and mustard; simmer 3 minutes or until mixture is reduced by half. Remove from heat; stir in cheese until melted.
  3. Pour sauce over chicken; season with pepper and serve.
