Cuban Quesadillas with Caribbean Chow Chow

Ingredients

  • Chow Chow:
  • 1 ripe mango, peeled, seeded, diced
  • 1 ripe avocado, peeled, seeded, diced
  • 1/2 cup jicama or crisp apple, peeled, finely diced
  • 1 jalapeño chili pepper, seeded, minced
  • 2 Tbsp. chopped fresh cilantro
  • 2 Tbsp. fresh lime juice
  • 1 tsp. finely shredded lime peel
  • 1/4 tsp. salt
  • Quesadillas:
  • 4 Tbsp. honey mustard
  • 8 (7-inch) flour tortillas
  • 2 cups finely diced cooked ham
  • 1/2 cup bacon, cooked crisp, crumbled
  • 2 Tbsp. finely chopped dill pickle
  • 2 cups (8 oz.) Sargento® Artisan Blends® Shredded Swiss Cheese
  • 2 Tbsp. butter, divided

Directions

  1. Combine mango, avocado, jicama, jalapeño, cilantro, lime juice, lime peel and salt in medium bowl; mix well. Cover and chill while preparing quesadillas.
  2. Spread honey mustard evenly over 4 tortillas; top with ham, bacon, pickle and cheese. Top each quesadilla with remaining tortillas.
  3. Heat 1/2 tablespoon butter in large skillet over medium heat until sizzling. Cook quesadillas one at a time 2 minutes per side or until golden brown and cheese is melted. Cut into 6 wedges; serve with chow chow.
