Rancher's Breakfast Pie

Ingredients

  • 6 eggs, beaten
  • 1/3 cup milk
  • 2 cups (8 oz.) Sargento® Fancy Shredded Monterey Jack Cheese
  • 3 Tbsp. chopped green onion
  • 2 Tbsp. chopped green bell pepper
  • 8 slices crisply cooked, crumbled bacon (optional)
  • 2 cups refrigerated, shredded hash brown potatoes
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. butter or margarine, melted
  • Paprika

Directions

  1. Combine eggs and milk in large bowl. Stir in cheese, onion, bell pepper and, if desired, bacon.
  2. Pour into greased 9-inch pie plate. Toss potatoes with salt and pepper; sprinkle over egg mixture. Drizzle butter over potatoes; sprinkle with paprika. Bake in preheated 325°F oven 40 minutes or until knife inserted in center comes out clean.
