Acapulco Smoked Turkey, Cheese and Rice Salad

Ingredients

  • 2-1/2 cups cooked brown rice, chilled
  • 1 lb. deli smoked turkey breast, cut into1/2-inch pieces
  • 2 medium tomatoes, diced
  • 1 small green bell pepper, diced
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1-1/2 cups (6 oz.) Sargento® Fancy Shredded Pizza Double Cheese®, divided
  • 1/2 cup Ranch salad dressing
  • 12 lettuce leaves

Directions

  1. Combine rice, turkey, tomatoes, bell pepper, onion and cilantro in large bowl. Add 1 cup cheese and dressing; toss.
  2. Cover and chill at least 1 hour before serving. Line 6 plates with lettuce leaves; top with rice mixture. Sprinkle with remaining cheese.
