Make yourself this indulgent meal of peppers stuffed with hearty ingredients like brown and wild rice, diced smoked sausage, and gravy and baby peas. A topping of melting Sargento® Shredded Colby-Jack Cheese - Fine Cut on each stuffed pepper gives a cheesy taste in every bite.

  • 4 large bell peppers, halved lengthwise, seeded
  • 1 pouch (8.5 oz.) full cooked brown and wild rice
  • 1-1/2 cups (8 oz.) diced fully cooked smoked sausage
  • 3/4 cup chicken or turkey gravy
  • 1 cup frozen baby peas, thawed
  • 1-3/4 cups (7 oz.) Sargento® Shredded Colby-Jack Cheese - Fine Cut, divided
  1. Place peppers in microwave-safe dish. Microwave uncovered on HIGH about 3 minutes or until crisp-tender. Arrange peppers cut sides up in one layer in a 13 x 9-inch baking dish.
  2. Heat rice in microwave oven according to package directions. Mix rice, smoked sausage, gravy, peas and 3/4 cup cheese in medium bowl. Fill peppers with rice mixture; top each with 2 tablespoons cheese.
  3. Bake in preheated 375°F oven 25 minutes or until heated through.
