Seafood boils are a big part of east coast cooking. Now you can make it part of your next camping trip by making single serve shrimp boils in foil packets. For a more dramatic presentation, make 1 large packet and then slide the whole packet onto the picnic table then fold back the foil to reveal the cheesy goodness inside. Ocean not included.

Ingredients
  • 1 lg. resealable bag
  • 20 ea. medium shrimp, peeled and deveined
  • 1 ½ lb. smoked sausage, cut into 2" pieces
  • 2 ears corn on the cob, cut into 8 pieces
  • 20 ea. small potatoes
  • 8 ea. small sweet peppers, cut in half, seeded
  • 1 Tbsp. Old Bay Seasoning
  • 1 Tbsp. vegetable oil
  • 1 ea. lemon, cut into 8 wedges
  • 1 cup water
  • 1 cup Sargento® Shredded Mozzarella - Traditional Cut
  • 4 sheets heavy duty aluminum foil, approx. 12" X 20"
Directions
  1. In a large resealable plastic bag, combine shrimp and next 6 ingredients. Seal, then toss to coat.
  2. Place one piece of foil on a flat surface. Transfer 1/4 of the shrimp mixture from the bag onto one side of the foil, then fold sides up.
  3. Squeeze two lemon wedges and 1/4 cup of water over mixture.
  4. Fold over foil, then fold in 3 open sides to create a sealed pouch (9”X9”). Make sure to tent mixture to allow for steam. Repeat process with remaining foil, shrimp mixture, lemons and water.
  5. Place foil packets on cooking grate over medium hot fire using a long spatula. Cook for 20 minutes.
  6. Remove packets from heat with spatula, open packets, and sprinkle cheese and parsley on top.
  7. Cover with foil and let rest for 2-3 minutes or until cheese is melted. Serve.
