These heart healthy lettuce rollups are filled with smoked salmon, cucumber and a lemony avocado dill spread. Delicious!
Ingredients
1 whole avocado, halved, pitted and mashed
2 Tbsp. fresh dill, chopped
1 tsp. fresh lemon juice
¼ tsp. Salt
4 leaves Bibb lettuce, washed and patted dry
4 slices Sargento® Ultra Thin® Swiss Cheese
4 slices prepared smoked salmon, thinly slices
1 baby cucumber, thinly sliced
4 whole fresh chives
Directions
In a small bowl, combine avocado, dill, lemon juice and salt. Stir until well blended.
Place large bibb lettuce leaves on a flat surface. Lay two slices of smoked salmon over each piece of lettuce. Top with swiss cheese, prepared avocado dill spread and cucumber slices. Roll up and tie each with a fresh chive. Serve.
